 Pizza Menu Guide and True Italian Pizzas

You are undoubtedly familiar with Hawaiian, Americano and Vegetarian as they are popular favourites. Some lesser known pizza recipes are Formaggi, Capricciosa, White, New York and Traditional. Some variances include Calzone and Stromboli.

A pizza is quite simply any dish prepared on a dough base with main ingredients of tomatoes and cheese but the original pizza recipes are quite different. A traditional Italian pizza is freshly made (never cooked from frozen), hand tossed and cooked in a stone oven at temperatures exceeding 350 °C. It also has a thin base, uses local ingredients and regional recipes that incorporate the use of olive oil or oregano oil. In Italy, it is illegal for restaurateurs or takeaways to advertise Traditional Italian Pizza unless they follow these guidelines for food ingredients and cooking processes.

American Pizza

Throughout the years, new pizza recipes have been created across the world and especially in the United States. Now there are several ways to bake the crust and a plethora of different toppings to choose from. Here is a summary of some lesser known pizza dishes.

Many American pizza pies have adopted names from their place of origin. There are a great variety of styles: Chicago pizza is deep with a buttery crust up to three inches; St Lois pizza has a super-thin yeast free crust and is cut into squares; California pizza is a single serving dish which uses any local ingredients; Detroit pizza is square shaped with toppings placed under the sauce; New York pizza originated in the early twentieth century and is very similar to Traditional Italian pizza.

Italian Style Recipes

Modern pizza originated in Italy as the Neapolitan pie with tomato baked on a dough base. Cheese was later added in 1889 and the Neapolitan pizza was born. There are two variants of Neapolitan pizza; namely Marinara and Margherita. Pizza Marinara consists of tomato, garlic, oregano and extra virgin olive oil while Pizza Margherita is made with tomato, sliced mozzarella, basil and extra-virgin olive oil.

Many styles of Italian pizza are available: Romana has tomato, mozzarella, anchovies, oregano and oil; Capricciosa has mozzarella, tomato, mushrooms, artichokes, cooked ham, olives and oil; quattro formaggi (four cheese pizza) has tomatoes, mozzarella, stracchino, fontina and gorgonzola; Sicilian-style pizza has its toppings baked into the crust under the tomato sauce; Bianca (White pizza) typically has sour cream instead of tomato sauce.

Calzone and Stromboli are popular alternatives to regular pizza. Calzone has toppings like regular pizza but inside a folded dough while Stromboli dishes consist of toppings stuffed inside a dough.
